Baked Bannock

Ingredients:

  • 2 1/3 cups Whole wheat flour
  • 1 teaspoon Baking powder
  • ½ teaspoon Salt
  • ¼ cup Soft butter
  • ¼ cup 1% milk
  • ¾ cup Water
Instructions: Preheat oven to 375°F. In a large bowl, mix flour, baking powder, and salt. With the tips of your fingers, work the butter into flour mixture until the butter is divided into small (pea size) pieces. Make a well in the center of the flour mixture; pour milk and water into the well. Starting from the center, gradually mix flour into liquid until a soft dough forms. Turn the dough onto a lightly floured surface, knead the dough a few times, cover and let it rest for at least 20 mins. Divide dough into walnut- sized pieces and flatten each piece into a round flat shape. Place flat dough on prepared baking sheet; bake for 20 minutes or until golden brown.

Serve with soup or stew. Eat for breakfast with peanut butter and jam. Or as a snack on the fly.

Yield: 4 servings.
