Indian Ice Cream

Ingredients:

  • ½ cup soap berries
  • Approximately 1-3 tablespoons of water (or to preference)
  • Sugar to taste
  • Vanilla extract to taste
Instructions: Harvest 1/2 cup of soapberries and clean and dry the berries. Cook berries in a pot for 30 mins. Do not add oil or water to the pot. Remove the berries from the pot and let cool. When berries have cooled transfer the berries into an oil-free mixing bowl and whip with a whisk, hand or electric mixer. The berries will get foamy, similar to a meringue. At this stage, add water and continue to mix. Add sugar and vanilla extract to taste Continue whipping the mixture until it’s as foamy as you would like it.

Yield: 4 servings.
